Commercial Restaurant Convection Ovens unlike conventional ovens, are ovens that have fans located in the back that circulate the air inside the cavity to eliminate hot and cold spots within that oven. Commercial Restaurant Convection Ovens typically have fans with two speed settings that are standard. Convection Ovens are sold in gas and electric and according to size. There are three sizes; full size which will hold a standard sheet pan of 18" x 26", half size which will hold a half-size sheet pan of 13" x 18" and quarter size which will hold a sheet pan of 6" x 10". There are two practical depths to consider with a Full Size Convection Oven; Standard or Bakery Depth. The Bakery Depth is helpful when turning a product is necessary. Bakery Depth allows a sheet pan to be turned with ease because there is enough space within the oven to do so. It eliminates taking the pan out and having to insert it back into the oven.
