Self-Cooking Control Mode has 7 operating modes specifically designed to automatically cook roasts, grilled food, poultry, fish, baked dishes, side dishes, and for finishing.
Combi-Steamer Mode is used for nearly all cooking methods employeed in the catering trade, with optional use of steam and hot air, either separately, sequentially or combined. The Combi-Steamer has 3 operating modes:
Moist Heat (steam) 85° F to 265° F;
Dry Heat (hot air) 85° F to 575° F, and
Combination of Moist Heat and Dry Heat 85° F to 575° F.

• Microprocessor-controlled cooking process
• Clear control panel with pictograms, easily read from any angle
• Individual programming of at least 350 cooking programs with up to 12 steps
• High Performance fresh steam generator
• Rack monitoring with individual time programming of each rack

• Core temperture probe with 6 measuring points
• Automatic cleaning system including unsupervised overnight cleaning
• Automatic active rinsing and drainage of steam generator
• Automatic limescale level indicator
• Service Diagnostic System with automatic service notices display
• Airflow optimized cooking cabinet
• Rear-ventilated double glass doors with hinged inside pane for easy cleaning
