Commercial Restaurant Char Broilers are offered in gas and electric units. Gas powered Char Broilers have three styles to pick from: Lava Rack, Radiant and Infra-Red. Lava Rock Char Broilers have a lava pumice rock that sits on a grate over the gas burners. Radiant Char Broilers typically have a pyramid type configuration made of stainless steel, steel, or cast iron over the gas burners. Infra-Red Char Broilers typically have some form of medium that emits the Infra-Red Ray which is the fastest and hottest heat one can buy. Infra-Red units can be over head fired or open hearth types. Electric Commercial Broilers have grates that sit over heating elements.
