Stock Pots for restaurants and commercial food service operations are a staple in the back of the house. Stock Pots are made of aluminum and stainless steel. Aluminum Stock Pots are offered as standard and heavy weight vessels. Stainless steel Stock Pots typically have aluminum clad bottoms because aluminum is a better conductor of heat. Induction ready stainless steel Stock Pots had a tri-ply metal. Tri-ply consists of three layers of stainless steel, steel and additional stainless steel. The steel metal is a requirement for it to be induction ready. One advantage of using aluminum Stock Pots is that they conduct heat faster and more evenly. Another advantage of using stainless steel Stock Pots is that they will not corrode over time due to acidic foods.
