Restoring a historic property is never a simple task — especially when it’s being transformed into a full-service hospitality destination with an upscale restaurant, café, boutique hotel, and event spaces. Recently, our project management and CAD teams partnered with Seven Acre Dairy Co., a thoughtfully restored cheese factory situated along the Sugar River in Paoli, Wisconsin. Surrounded by seven acres of manicured gardens, this revitalized destination blends boutique hospitality with elevated farmstead cuisine — and ZESCO played a key role in bringing its culinary vision to life.

  • The Dairy Café — a casual, comforting spot for breakfast, lunch, pastries, and locally roasted coffee
  • Soft-serve crafted in-house using milk from Fischerdale Holsteins
  • Boutique hotel rooms and event spaces designed with rustic charm and contemporary elegance

With multiple service styles under one roof, the operational layout needed to be efficient, intuitive, and adaptable — a perfect match for ZESCO’s kitchen design capabilities.
